This is a great recipe for on the go breakfast! I enjoy making these because they are so flexible....you can add pretty much anything in them. You will see my recipe below, but you can discard or add any veggie or meat you see in my recipe to fit what you like or have in your fridge. If you are trying to incorporate more protein or increase the iron in your diet, these will make great snacks you can take to work or wherever you may need to go! From my experience, kids really enjoy these too!
Preheat oven to 350
Spray muffin tin with non-stick spray
Cook until slightly brown and tooth pick comes out mostly clean. Enjoy!!
