A perfect way to freeze your "greens" for smoothies, soups, etc...is to blend/purée with some water & ice if necessary and pour into muffin pans or ice cube trays and place in freezer. This works for me and keeps me from wasting my greens if I don't use them in time. (The picture below is kale, spinach and parsley.) I prefer to use mini muffin tins for mine...it just seems to be the perfect size and they blend easier. I have definitely saved money by doing this. Greens can be pricy especially if you buy organic, so I don't want to waste a single leaf just because I choose to not eat all my greens that week.
